Camp Hash Recipe With Canned Potatoes

Oops! I had forgotten to go back and type this in the last entry as I had promised. Here's our favorite breakfast while out camping:

1 Pint Canned Potatoes (cut into chunks)
1/2 lb bacon cut into bite-sized pieces (I cut mine with a pair of kitchen shears right into the pan at cooking time)
1/2 onion chopped (I chop it before leaving to go camping and put it in a container)
8 eggs ( I crack and scramble them in a container before leaving)

Brown the bacon and onion until cooked through.  Pour liquid off of potatoes and dump into pot.  Gently stir until mixed well.  Make a well in the middle of the pan and pour in eggs.  Scramble and cook.  Once cooked mix evenly in pan with the rest of ingredients.  This feeds our 2 adults and 3 small kiddos, so adjust as needed to feed your family.
