Homestead Fare: The Best Cornbread I've Ever Tasted!


When you think of cornbread, what adjectives come to mind? Dry? Crumbly? Messy? Well, if that's the case, then Goodness Gracious; let me help!

I found the base for this recipe at allrecipes.com, and then tweaked it after reading the reviews. (Side Note: That is something one really should do on these type websites. You can save yourself a lot of grief by knowing helpful hints that others have experienced. Let them be the 'guinea pigs'!)

The recipe is:

3/4 cup butter
1 cup sugar
Cream these together. Then add:

3 eggs
2 Tbsp appleasauce or 1/4 cup oil (optional-I like it just fine without and it's cheaper that way!)
Mix well. Next add:

1 cup milk or buttermilk
1 cup cornmeal
2 cups all purpose flour
1 T Baking POWDER
1/2 tsp salt (omit if using salted butter)
Mix all together, and then pour into two loaf pans, two 8" round pans, 2 8" square pans, or muffin tins of choice. Bake at 325 until set-approx 15 minutes for standard muffins, and up from there for bigger sized breads.

This makes a really moist, rarely crumbly, cake-ish cornbread that would please any visitor to your homestead!
